30 Days of… Celery Juice
Drinking celery juice has been made popular by Anthony Williams aka Medical Medium who changed my life with the claim there is no such thing as autoimmune disease. Many people suffer their list of debilitating symptoms instead from the Epstein Barr Virus. He says it is responsible for Rheumatoid Arthritis, Hashimoto’s, Multiple Sclerosis, Fibromyalgia, and the chord that struck me, Chronic Fatigue.
After years of being told my symptoms were signs of depression and anxiety I got tested, and what do you know, my viral count was off the chart at 750! It may sound a little nuts, but my life had been debilitated for so long, when the doctor called me with the results I was absolutely elated! Finally a tangible answer, for every provider who gaslighted me and led me to feel alone only because they didn’t know what they were dealing with.
By the time I started celery juicing, I could only stand for a few minutes during the day due to weakness and dizziness. Other people grocery shopped for me. I spent the majority of my time isolated in my apartment trying to stave off darker thoughts. Even juicing seemed like too much energy, and I was strongly debating a wheel chair to keep from fainting.
By the end of 30 days I was sleeping more soundly. I didn’t have to wake as much in the night to eat from low blood sugar. I could do my laundry and wash my dishes without feeling overwhelmed. I could even grocery shop alone! Gently swinging in the sun in a park near my home, I revived my hope. All this from 16 oz of celery juice taken alone first thing in the morning on an empty stomach.
Why might you be interested in this seemingly random thing of juicing celery? It heals acid reflux by rebuilding hydrochloric acid to improve digestion. It’s an antibacterial killing strep and h. pylori decreasing viral counts. It improves energy, mood and mental clarity by strengthening the adrenals. “I expected to be feeling better at month two”
It’s month 2 of celery juice to rid myself of the Epstein Barr Virus causing Chronic Fatigue. I must say the first month cleared so much fog in my head and made it easier to get out of bed, I thought I was going to be feeling pretty good through month two. I instead experienced a lot of detox symptoms like kidney and liver pain, lethargy, intense depression, painful bowel issues and a fun tingling metallic taste in my mouth. It was actually pretty scary as I thought I was developing food allergies to everything I ate. I was comforted when Anthony William’s book on Celery Juice came out and addressed every seemingly random symptom, and assured me that taste was a liver purge. Thank goodness! Anyway, I’m on the right track, and I know this is a little late, but July 11th marks the three month mark of 16oz of daily celery juice on an empty stomach. I’ll have another update.

3 Months of Celery Juice!
I know,…why would anyone want to juice celery? When I returned to Alaska in the winter of 2015 I was too fatigued and anxious to continue my own massage practice, but I could still walk four miles every few days as exercise.
Then, over the years I got weaker with an increase in unpleasant symptoms which led my dream of a boyfriend to do my driving and grocery shopping while I stayed home for long stints stressing about what would physically happen next.
To avoid this consuming fear, I learned to focus on gratitude. I’m grateful for relationships, sunshine, and the food I eat. I’m grateful for all the things my body has done up to this point. I’ve been to Israel, floated in the dead sea, and I’ve pet puppies, and completed boot camp.
This awe for my life combined with a little celery juice I’m sure, is changing my point of attraction. I’m now focused on gratitude in the moment and positive daydreams for the future. I feel myself getting stronger and for that I’m eternally grateful.
My goal is to embrace my prior nomadic nature and travel in a converted bus or van from Alaska to Florida where I can see my cousin at her gluten free vegan cafe, and complete 19 hours of scar tissue release from Clear Passages. Why do you juice celery?

It’s been four months of juicing 16 ounces of celery every day!
Let me just add another sentence here before I get into the nitty gritty of bowels. The biggest change that came about this month was the diarrhea stopped! I have been experiencing it 5-8+ times per day for so long I don’t even remember when it began. It’s all formed up and now manifests as a long impressive piece about three times per day. My bowels have never been so healthy. Well that was nice, now that you’ve pictured that. I’m trying to create an honest account of my journey and I just didn’t know how to avoid it.
Here’s some other things that are contributing to this ideal form.
~ 50% of my meals come from fruit, which is very hydrating and full of water.
~ I don’t eat processed food so there is no risk of over feeding virals that create more waste often accumulated in the intestinal tract.
~ Along with processed food is grains, which even organic have pesticide residue which can be very irritating to a healing body. A corn tortilla used to pug me up, and wheat flour would cause brain fog so thick I’d fall asleep.
Anthony William, the man who brought about celery juice decades ago really advocates more of a whole foods diet, and if you are really ill, consider going raw, or at least cutting out grains and beans. His book Life Changing Foods really lays this out clearly. Personally I still eat beans because it stabilizes my blood sugar so well. I just wanted to say, I’m not a poster child, so there is hope for people to see results rather quickly, especially with less severe symptoms.

September 11th marked five months of celery juice everyday! Here’s the latest update in changes.
I’m rarely dizzy now! Granted if my blood sugar is low, or I eat something that doesn’t agree with me, it can come momentarily, but I’m not afraid to take a shower by myself anymore, or drive close to home.
I’ve also had the energy to go on short walks! That's a far cry from holding walls to navigate my home, and needing to sit down while I cook a meal. Expect some pictures coming soon. I just love fall foliage. The ground in Alaska is so beautiful with the moss and the mushrooms.
Recently I have discovered other people who suffer from balance issues, vertigo, dizziness and migraines. The term is called Vestibular migraine, or and can be diagnosed as Meniere’s Disease.
Anthony William says the true cause of this is Epstein Barr virus creating toxic byproducts inflaming the vagus and phrenic nerves, as well as the brain. October 2019 marked six months of celery juice. My energy levels are still very low. Let’s just say having my partner drive me around in the car while we check out new neighborhoods to live is the highlight of my day, and also very tiring. After about 1.5-2 hours I’m cooked.
I’m pretty sure there is an environmental factor in my apartment keeping me so sedated. It could be what’s giving me all these new rashes and bumps on my hands lately, or it could be a sign of detox. I’ve added another meal of juice to my day consistently containing apples, ginger and lemon.
I feel the real test for celery juice will come when I move. If I start dramatically improving, I’ll know I’ve done everything right and mold was the factor. Perhaps I’ll be in a new place by months seven. I’ll update.
